Coconut Cake

coconut-5So I know I said I love to make things from scratch, so I hope this cake does not mislead anyone! Because I do love to scratch up a recipe but I don’t mind taking shortcuts either. So here is a shortcut recipe! The main reason I chose this is because it is my Mom’s FAVORITE cake. I promised her a few times this year I would make it and had not gotten to it yet. The other reason I decided this would be my first one to share… EVERYONE asks me for the recipe when they try it. The reason being it taste like wedding cake. So you can forgo the coconut finish and have an amazing almond/vanilla white cake.

So like I said this is a “shortcut” recipe, meaning it starts with a boxed cake mix. I prefer the Duncan Hines cake mixes because they always seem to be so spot on. They are always moist, but use your favorite brand. Telling you how to make this could not be any easier… in fact at this moment I am having remorse for sharing this as my first recipe because it is ridiculously easy… but the cake is done, pictures are taken, so I feel pretty committed. So make the cake according to the directions on the back of the box. My sister, Nissa assisted in the cake baking festivities. And she asked me why the cake only called for egg whites. Well, this cake is a white cake so they are trying to keep all color out of the cake (no egg yolks, clear vanilla, etc). If that does not matter to you, use regular vanilla and you can use the whole egg (but I save my yolks and make crème brulee… YUMMY!).

To make this cake… follow the directions on the box (I make 2 boxes and use 8” round cake pans). Yup… really it’s that difficult! (I told you I was remorseful!) My wonderful God-mother (Sylvia) taught me to make this cake and the frosting! She only adds one flavoring to her cake, but I prefer both in the cake and the frosting. So I tweaked it. But I assure you not a soul on this earth makes this cake or any other baked good as well as her. She has taught me a lot about baking over the years! I add in about a tablespoon-ish (I am always heavy handed with these two flavorings) of vanilla and Almond. That is it! That is the only change you make to the cake. But it is crazy how much it improves it and changes it. Trust me… MAKE THE CAKE. You will understand!
So really that is it for the cake. I bake according to the box. I use professional grade baking pans that my Fabulous Mother-in-law gave me when Jody and I got married. They truly do make the difference. These are the equivalent to good make-up brushes! Invest in them! They make your cakes bake even and tall and they are usually pretty flat across the top. Some trimming is needed if you want, but they are great!

  • So bake the cake according to the box. CHECK!
  • Use good pans. CHECK!
  • Revel in the glorious smell wafting from the over. CHECK! CHECK! CHECK! Even Nissa made a comment about this one.

So on to the frosting…

This too is fairly simple; pop open a can of frosting. I kid! I kid! That stuff is terrible! Throw that shit in the trash. This frosting starts with a Crisco base. You can do a butter base, but this way it can sit on the counter. If you prefer butter, go ahead. I have made it both ways. I buy the 1 cup Crisco “blocks”, because it saves me from measuring and keeps one more thing clean in my kitchen while I am baking. I throw that in the Kitchenaid and start it whipping. I like to add the flavoring now, because the frosting can go from too thick to too thin quickly. So I want to make sure I don’t add in too much wet ingredients at the end. Again I start with a tablespoon-ish of each flavoring. As you go you can taste it to your liking to see if it needs more of either. Now start to slowly add in the 2lbs of powder sugar (FYI: that is a whole bag of powder sugar). When it starts to get too thick, add in a tablespoon a water to a time. Do not be like me when I am in a rush and pour in more than that too fast… you will end up with runny frosting quickly! That is it alternate you sugar and water until you reach the consistency you want. I look for a happy medium. I want it spreadable, but not too thin. I don’t want it sliding off my cake. Once you make it a couple of times, you will decide how you like it best. ***REMEMBER to add any extra flavoring that you want before you are happy with the texture or you could make it too thin.***

Now Frost the cake… I cut my 2 8” layers in half so I have 4 thinner layer. But you can keep it to 2 8” layers! My mom likes coconut between each layer… but they are not as stable and honestly I forget after I have put on the 2nd layer, so I just put the coconut on the outside, but if you LOVE coconut… add it between your layers!

Recipe:
Cake
2 White Cake Mixes (make according to the box)
1 Tablespoon Vanilla extract
1 Tablespoon Almond extract

Prepare cake according to directions on the box. Add in vanilla and almond, mix well. Grease 2 8” round pans and back according to box.

Tips: Once I have my batter in the pans, I “pop” the pans on the counter to help remove air bubbles and to level the batter before it hits the oven. Adjust the flavor to your preference, add a little extra if you want a stronger flavor or scale back slightly for a more subtle flavor.

Frosting
1 cup Crisco
2lbs Powder Sugar
1 Tablespoon Vanilla extract
1 Tablespoon Almond extract
Water- added for desired consistency
1 7oz bag of sweetened coconut flakes

Mix Crisco, vanilla and almond. Slowly add in powder sugar, alternating with a tablespoon of water until you reach your desired consistency. Frost your cake and add coconut.

Tips: If you are looking for a smoother texture for your frosting, sift the powder sugar first. Adjust the flavor to your preference, add a little extra if you want a stronger flavor or scale back slightly for a more subtle flavor. Add coconut between layers for extra flavor.

Happy Baking!!

Not sure if I am going or coming… What day is it?

So I said my next post would be baking… And apparently I lied. Things have been so crazy for the last couple of weeks. This has caused a major delay in my plans of baking!

Jody came home a week ago this past Tuesday holding his arm. He had been moving a stubborn piece of pipe (that was insistent not to cooperate and stay in the front end loader to simply be moved)… Jody tried to “coax” in the bucket, next thing he knows he heard two loud pops, his arm flung to the ground like a rubber band and there was immediate excruciating pain that made him nauseous. He was not sure that there was “really a need” to go to the emergency room that night. When he told me about the “divot” in his arm, I knew he had torn something and told him we were headed to the ER. We spent a few hours there to find out he had ripped his bicep off the bone and they would be referring him to a specialist. Thursday was the quickest we could get in to the Orthopedic surgeon and get his MRI done. The surgeon confirmed what the ER told us but said he also ripped the tendon from the bone. Our only option was to do surgery or he would lose 80% (+/-) motion in that arm. I think Jody truly contemplated not having surgery, because let’s face it surgery is scary! But he agreed and we scheduled the earliest he could get in.

His surgery was a week to the day of the injury. It started much later than we had planned. He was just being moved into recovery about the time I originally thought we would get home. His oxygen levels were very low which caused concern, but after a few things this was remedied and he looked good and was finally released to go home. We had about a 12 hour day which was much longer than we expected for the hour – 1 ½ hour surgery we headed out for. But the good news is everything went great! The doctor was very pleased with the jody-ersurgery and the staff was wonderful! Now I only have to make sure he puts nothing in that hand heavier than an 8oz coffee cup, or twist it too far, or get it wet, or extend it to far and make sure he keeps it in a sling…. Clearly this will be a breeze!

Here is a picture of Jody in the ER. You can see the crease in his left arm near the elbow. That is where his muscle had bunched up and caused it to look “off”.

Here are happy thoughts for his healing and recovery! He has been a good patient thus far.

I did attempt to start the cake before the surgery for my next post, but we got home so late there was no  time energy to finish. So that is on my to do list tonight.

Horses

The continuation of my ramblings

Let me preface this blog post with saying that I thought starting a blog would be easy. >>>LONG DRAMATIC PAUSE<<< Clearly I was mistaken! I had no idea I needed to be an IT guru to get this thing started!! And let me be clear, just in case the last sentence was not… I AM NOT AN IT GURU! I consider myself to be very slightly tech savvy, in the way that I own an iPhone. Not that hey I can rewire your server…. Starting the blog was closer to rewiring the server than finding Facebook on my iPhone I assure you. But I digress… I am here, so we move forward.

My first post was really just getting to know me, so I guess we can move a little further into that. I have 4 of the cutest Pooters (our nickname for the dogs) you could ever ask for. They are like Jody and I’s children. And like little children, even with their cute little angelic faces… they like to tear shit up. It’s a good day when we come home and there has NOT been a flip-flop that has met its demise, or trash from the bathroom that has been spread from one end of our 1,000 square foot home (yes we deserve an award for piling this much crap into such small living quarters) or just someone who even with my Daddy’s futile attempt to let the girls out 10 times in the 8 hour period they are trapped in these horrible conditions a.k.a. air-conditioned and yes even heated in our terrible south Texas winters (no really they are terrible, I don’t like to be cold), beds and blankets galore for whatever color, thickness, texture or area of the house that your little heart desires for the day, has managed to pee right in front of the door. ***See how crazy my thoughts are. I was typing this and completely forgot where my thought even began, or where I was headed… oh look something shiny.*** But they are cute. We have Roxy, she is the matriarch of our pups.  She pretty much let’s everyone know how the house is ran, but she really just wants to lay with Daddy and “watch t.v.” a.k.a. take a nap. Daisy Lynn, well that is my little princess. She is a AKC Maltese, but she is a big Maltese, 8lbs! We don’t tell her that. She thinks she is dainty, prissy and runs this show. All the commoners can kiss her paws. She is very aware of her princess stature. Then we have Annie pants. How this poor dog ended up with pants as her middle name, I will never know… but it stuck. So here she is, pants and all. She is the most beautiful tri-colored Mini Aussie with the prettiest crystal blue eyes. She is a very striking dog. And she is probably the most affectionate dog I have ever had. She would like to sit with, touching you, being petted, licking you 1000’s of times and repeating. That’s it… her day is made. The last of our little puppy tribe is Laci. She was an adoption. I went to the animal shelter (which just FYI unless you want me coming home with a new addition to our brood, keep me away from here!) to help my sister find a dog… she left without a dog and we had a new dog. Funny how that works! Adopting her was a very emotional process. I knew deep down we were supposed to have her for some reason and I did not back down from my very dear, sweet and understanding husband when he told me we had 3 dogs and we really did not NEED a 4th dog. I told him I completely understand his logic; however, she would be coming home with us. So we compromised and got a dog!

***A cute little side note, Jody and I took a cruise in December 2015. We were sitting on the beach enjoying the sun (remember my earlier mention of not enjoying the cold… I was really basking in the glory of this very warm sun and beach… but back to my story). There was a couple standing over there >>>flailing arms<<< talking and they said they never wanted to go home; Jody softly says, “if you had Pooters as good as ours, you would”.  They really do make our life happy!!

My four-legged animals bring us such joy… but there is some heartache involved, which brings me back to my horse, Walter. He is gorgeous. No really he is very striking. He is about 15.2, wears about 82/84 blanket, just naturally muscular. And he is the most beautiful bay color you have ever seen. ***And for all of my non-horse friends, I just described Channing Tatum… Please proceed*** I had such high hopes for him. He was gorgeous, good minded and went around doing whatever I threw in front of him today. But I called him my cripple, because he had a mystery injury that even the $15,000+ at the vet could not diagnose. In the process of trying to diagnose him, he broke his navicular bone. Every day is a crap shoot with us. He is still gorgeous and good minded (most of the time). Maybe one day we can get and KEEP him sound. Right now, he thinks he is a dog and should be kept in the house. But really he is just decoration for the barn… lol

Clearly my animals are a large portion of my life. Is this not the norm for everyone? Because this seems completely acceptable to me! I want to have places that my pups (and maybe a horse on occasion) can go with me for dinner, a movie, shopping, etc. Not everyone’s thought? Ok, just more of me and my craziness. I have come to terms with this though, so all is well.

I hope that my blogs get more informative, or interesting or whatever exactly they are supposed to be. Next up… a cake! I promise!

The true ramblings of a first time blogger…

cropped-FullSizeRender.jpgMost of you that are reading this know me (Hi Mom!), but for the 1 ½ that do not, here goes…

My name is Kim Kaase and I thought it would be fun to have a blog to share my thoughts, humor (crazy as it may be), my love for baking and photography, as well as my passion of horses and handbags! So this blog will become as chaotic as my thoughts are. I promise to try to organize them, even if only slightly, because the good Lord knows that no other sane person will be able to keep up with that non-sense.

I love to bake! All things… well that’s not 100% correct! I can’t roll out a pie crust to save my life! So I buy those pre-made, but I make the filling from scratch. But I love to make cookies, cakes, frosting, candies, etc. I have not been baking as much as I used to but I am hoping that will change, so that I can share some yummy goodness with you!! 😉

I enjoy taking pictures! And every so often I get one that even I am shocked with! So I figure that I will share those (like every 1 in 1,000… I kid… only every 1 in 876). Some will be of people, some of a random landscape and some of the cutest pups and horses you will ever see (but I am partial!).

My horses have been the most constant thing in my life, with the exception of my family, for as long as I can remember. I have been truly blessed with the fabulous equine partners God has blessed me with. They all have their own personalities and quirks that you love (and sometimes hate… hate is a strong word; Despise? Loathe? Let’s just say dislike). But all of my horses have had a hand, or hoof, in the person I have become. I currently have 4 horses: Poco (the old man), Walter (the cripple), Ms. Jeanie (the broodmare/yard ornament) and Ms. Sammy Sue… who is the newest addition and hopefully my future show horse. My parents purchased Poco for me when he was 4… and he was CRAZY! Not truly, but he was extremely spooky. He was a lesson that I didn’t think I wanted, but soon realized that I needed. He taught me so much about perseverance, dedication, good rides, bad rides and even terrible rides. He taught me that when the odds are stacked against you and no one believes in you, you believe in yourself and you will succeed. And that victory is sweeter than anything you can imagine. The old man taught all of my nieces a little of what he taught me (even if it was that he was CRAZY, haha). He was wonderful and now he runs the barn the way he sees fit! I will fill you in on the others at another time… or this blog post will take you a couple of hours to read through, lol.

My bag obsession is real… I should truly be committed but I have managed to avoid
that at all costs. You will see… it’s a problem! But I feel they all need homes (which is precisely how I ended up with 4 dogs)!

Last but not least I have a wonderful husband! He supports all of my craziness (and has even bought the majority of my purses, and if that is not true love I have no idea what is). He is my tractor driving, horse trailer pulling, puppy cuddling, horse show attending, vet clinic chauffeuring hubby! He truly does support me in all the things that I want and need to do. He has cheered me on at a horse show and wiped my tears at the vet and he is always willing to try my newest concoction in the kitchen! I am very lucky (plus he cooks wonderfully and cleans). I will keep him… he is fabulous.

I have a big family… lots of sisters, nieces, nephews, great nieces & nephews! It’s really big! We are always getting together for a graduation, baby shower, wedding, birthday, holiday or whatever, so you will see pictures and hear about all of the CRAZINESS we call family. It’s usually entertaining… but sometimes draining to have such a large family. But we are very close and everyone is there for you if and when you need it! That makes life a little more bearable.

This was a slight look into what the future of my blog will be about (I told you we would jump all over the place: baking, photography, horses, family, purses… it will all be here. Just try to follow along).
